Last week I headed North to Deer park to check out a local coffee shop, Lofty Skies, that I have been meaning to visit for some time. Now that I have finally visited and discovered this gem I am kicking myself that it took my so long to stop on by. Irregardless, now that I know what a special little place Lofty Skies is, I would certainly love to visit often. I loved and appreciated their attention to detail in the way that they have created the space to be warm and welcoming. Comfy couches are set up in a lovely little area to feel like a cozy living room space. There is a whole wall that has a bench running along one side, with round tables and cute chairs on the other side. There are nooks that are conducive to studying or reading on your own and larger areas that are perfect for gathering with others. They also have a cute little kids area that is complete with a chalkboard and toys.
They love supporting other local businesses by carrying and offering different local products like : Winterwoods tea company, Glorious oil and vinegars, Mak bread, Mi Flavour macarons, Rocket bakery, Casual Friday donuts and more. Their coffee is from 4 Seasons coffee. At Lofty, they carry 2 custom blends, a dark roast and a medium roast and they also have a decaf and a white coffee. Fun fact, 4 Seasons is Spokane’s oldest roasting house. I just found that out myself. Isn’t that so cool?

When I planned to visit Lofty Skies I was most excited to try one of their toasts that I often see them post about on “the gram”. You guys, let me tell you their toast options are impressive! You can create and fully customize your own toast creation. After spending more time than I should have deciding what kind of toast I wanted to create, (thank you for your patience Jason, haha), I finally made my decision. I chose cream cheese, fresh strawberries, fresh avocado, some everything seasoning with a drizzle of agave on one side of the toast because it sounded good and I was feeling adventurous but also wasn’t sure how it would turn out. Oh my heavens to Betsy, it was SOOOO good. I keep thinking about that toast, no really I do. If you don’t feel up to customizing your own toast here are some of the options that they have created for you: Open-faced BLT or Smoked salmon and cream cheese or strawberry, blueberry, ricotta, granola and cinnamon. In addition to their wonderful toast options they also protein shakes, smoothies, salads, soups, breakfast sandwiches, cookies, pastries, quiches and more. I also had a little birdie (a friend who lives in Deer Park) tell me that they have an amazing chicken salad sandwich. That is definitely something I am going to need to go back and try soon. I do love a great chicken salad sandwich.
While I hadn’t planned on it I had the privilege of meeting owners, Trisha and Jason. As I often do, I asked Trisha if she had a few minutes to tell me the story of their business, how it got started and so on. I was so blessed by what she shared about the story of their coffee shop and how it came to be that I asked her if I could share it this blog post.
Here is what she had to share:
“In 2015 my husband, Jason, had been working HVAC for 15 years. I (Trisha) was a stay at home mom with three kids. Two of which have mental and physical disabilities. On Father’s Day of that year, my husband was in an accident in which he broke his neck and back. After going through surgery and physical therapy, he is healed but still suffers daily from pain that won’t ever go away. He’s thankful for the pain because it reminds him that he’s still alive and walking. We didn’t know where our income was going to come from since he was unable to work in that industry anymore. He wasn’t able to care for our kids needs on his own yet and I couldn’t get a job until he was. One day we were walking down the strip on N. Main St. and noticed a little shop for $300 rent. We thought, we could sell our re-purposed home decor. When I called, the owner said its no longer available, but he had a different spot to show me. I went that evening with no intention or “plan” of business. I figured it couldn’t hurt to look. It was so beautiful!, images flooded my head of what I wanted to see inside. Not a coffee house. I signed a lease without having a plan, without having an income, without even speaking to Jason. That’s just not something I do. But I did, and I had so much peace about it.”
“See, the Lord gave me the name “Lofty Skies” about a month prior. I didn’t realize then, why those words in that devotional stuck out to me. Even when that was officially the name, I hadn’t ever heard the hymn that it came from. While we were focused on putting together our “re-purposed home decor” store, the space was just too grand for retail alone. We decided to add coffee for shopping customers. Still not a coffee house. It wasn’t until the cafe lights went up that we could see the bigger picture of what God was doing through us. That’s, when it became a coffee house. It was bigger and better than we could have ever imagined for ourselves. The Lord knew that we needed to have availability to stop what we are doing and tend to our kids. He provided. The Lord knew that Deer Park needed a space for fellowship in an intimate setting. He provided. The Lord knew that He wanted us closer to Him. He provided. Once we decided to submit to His will over our lives and stop hoping for the comfort of what use to be, His comfort came. We found rest in His promises. Over and over and over again. We’re so thankful God allowed this to happen to our family. We have so much more with Him because of it. Our intention, the Lord’s intention for Lofty Skies, is for people to fellowship together. Whatever that looks like for you. We want to pour into you. We want to know how you are. We want to laugh, talk real & pray with/for you. We want to be the place you can rest from the world.”
What a beautiful story of trust, perseverance and a huge heart for community. Lofty Skies is exactly the kind of local business that you want to visit and support. They have a heart for others and want to leave a positive impact on the community.
